In Nairobi, buffalo mozzarella is a rare treat. The mozzarella is made from milk of an Italian domesticated buffalo. Before the year ends, why not savour it while imagining how hard it might be to milk a buffalo or raise one?

I tasted a piece at La Terrazza, a cozy Italian restaurant that recently opened on Nairobi's Ngong Road. The white curdy mozarrella looks and almost tastes like a boiled egg, but not from a chicken that's been reared in Kenya. Have you tasted those pure white eggs (yolk and egg white) that Swedes eat? It tastes like that, almost like chewing heavy cream and yogurt and custard at the same time.

If you have lactose intolerance or irritable bowel syndrome, you don't have to avoid the buffalo mozarella, I seemed to be able to tolerate the buffalo milk well. It is served with tomatoes and a few leaves of fresh basil.
